- 1 lb boneless, skinless chicken breast
- 8 oz spaghetti
- 1 tbsp olive oil
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup shredded Monterey Jack cheese
- 1/2 cup grated Parmesan cheese
- 1/4 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
- 1/2 cup chicken broth
- 1 tbsp butter
Instructions
- Cook spaghetti according to package instructions; drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season chicken with salt, pepper, and smoked paprika. Cook for 6-7 minutes on each side until cooked through. Remove, slice into strips, and set aside.
- In the same skillet, melt butter and sauté onions and garlic for 2-3 minutes until softened.
- Add chicken broth; bring to a simmer. Stir in heavy cream and cook for another 2 minutes.
- Reduce heat to low; stir in Monterey Jack and Parmesan cheeses until melted.
- Toss cooked spaghetti into the skillet until well coated in sauce.
- Serve topped with sliced chicken and fresh parsley.
