  • 68 oz chicken thighs (cut into bite-sized pieces)
  • 1/4 cup frozen mixed vegetables
  • 3 brown mushrooms (diced)
  • 2 cups cooked white rice
  • 2 tablespoons ketchup
  • 6 large eggs
  • 2 tablespoons milk
  • Salt to taste

Instructions

  1. In a skillet over medium heat, sauté diced onions until translucent. Add garlic and cook until fragrant.
  2. Incorporate chicken pieces and cook until no longer pink. Add frozen vegetables and mushrooms; heat through.
  3. Stir in cooked rice, ketchup, soy sauce, and season with salt. Mix well.
  4. In a bowl, whisk together eggs, milk, and salt. Heat the skillet again and pour half the egg mixture in.
  5. Cook until edges are set but center is slightly runny. Place fried rice on one half of the omelet; fold over to cover.
  6. Slide onto a plate and repeat with remaining ingredients.
