  • 1 cup pitted dates, chopped
  • 1 cup boiling water
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Zest of 2 oranges
  • 1/2 cup fresh orange juice
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cardamom
  • 1/4 tsp salt
  • 1/4 cup honey
  • 1 tbsp fresh orange juice

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8-inch cake tin.
  2. In a bowl, combine flour, baking powder, ground cardamom, and salt.
  3. In another bowl, cream together softened butter and light brown sugar until smooth. Mix in eggs, vanilla extract, orange zest, and orange juice.
  4. Fold in chopped dates into the butter mixture.
  5. Gradually add dry ingredients to wet ingredients; mix until just combined.
  6. Pour batter into the prepared cake tin and bake for 40–45 minutes or until a toothpick comes out clean.
  7. For the honey drizzle, warm honey and orange juice in a saucepan over low heat until combined.
  8. Drizzle warm honey mixture over the baked cake while it's still warm; allow to cool before serving.
