  • 16 oz uncooked orzo pasta
  • 1/2 cup feta cheese
  • 2 ears grilled corn
  • 1 English cucumber
  • 1 red bell pepper
  • 1 pint cherry tomatoes
  • 1 can garbanzo beans (chickpeas)
  • 1/2 cup Kalamata olives
  • Fresh basil
  • Olive oil and lemon juice for dressing

Instructions

  1. Prepare the dressing by whisking together olive oil, red apple vinegar, lemon juice, herbs, sugar, Dijon mustard, garlic powder, salt, and pepper in a jar.
  2. Cook the orzo in a large nonstick skillet with melted butter and olive oil. Sauté chopped onions until soft.
  3. Stir in chicken broth and seasonings; simmer until orzo is al dente. Allow to cool.
  4. In a large bowl, combine the cooled orzo with chopped vegetables, chickpeas, olives, nuts, basil, and feta.
  5. Toss with dressing until evenly coated. Adjust seasoning if necessary before serving.
