- 1 can (15 oz) cannellini beans (drained)
- 1 can (15 oz) kidney beans (drained)
- 1 can (28 oz) crushed tomatoes
- 4 cups low-sodium chicken or vegetable broth
- 1 cup water
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 cup ditalini pasta
Instructions
- Heat olive oil in a large pot over medium heat. Sauté diced onion, carrots, and celery for 5–7 minutes until softened; add minced garlic and cook for 1 additional minute.
- Add cannellini beans, kidney beans, crushed tomatoes, broth, water, dried oregano, dried basil, red pepper flakes, kosher salt, and black pepper. Bring to a gentle simmer.
