  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • 6 cups chicken or vegetable broth
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 cup ditalini pasta
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Cook until browned; remove and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5–7 minutes.
  3. Stir in garlic, oregano, basil, and red pepper flakes (if using). Cook for an additional minute until fragrant.
  4. Pour in chicken or vegetable broth along with crushed tomatoes. Return cooked sausage (if using) and add rinsed beans.
  5. Bring the mixture to a boil. Reduce heat and let simmer for about 15 minutes.
  6. Stir in ditalini pasta. Cook according to package directions, typically around 8–10 minutes, until al dente.
  7. Taste your soup before serving. Adjust seasoning with salt and freshly ground black pepper as needed.
  8. Ladle soup into bowls. Garnish each serving with fresh parsley.
