  • 1/2 to 2/3 cups chopped nuts (such as pecans, walnuts, hazelnuts, or peanuts)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9" x 5" loaf pan.
  2. In a mixing bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt; set aside.
  3. Using an electric mixer, cream together softened butter, brown sugar, and peanut butter until fluffy. Add eggs one at a time and mix in vanilla.
  4. Gradually incorporate the dry ingredients into the wet mixture alternately with sour cream until just combined.
  5. Gently fold in mashed bananas (and nuts if using).
  6. Pour batter into the prepared pan and bake for 50 to 55 minutes until golden brown; a toothpick should come out clean.
