Ingredients

  • Ground chicken (or turkey)
  • Lightly salted peanuts
  • Rice noodles
  • Boston lettuce leaves
  • Soy sauce
  • Oyster sauce
  • Fresh ginger
  • Garlic cloves
  • Lime juice

Instructions

  1. In a small bowl, whisk together soy sauce, oyster sauce, water, sambal oelek, honey, ginger paste, lime juice, minced garlic, green onions, rice vinegar (if using), cornstarch (if using), and sesame oil.
  2. Pour 3/4 of the sauce over the ground chicken and chopped peanuts in a mixing bowl; let marinate for 15 minutes.
  3. Soak rice noodles in water until softened. Drain and cut into smaller pieces.
  4. Heat sesame oil in a skillet over medium heat; sauté marinated chicken mixture for about 10 minutes until cooked through.
  5. Add soaked noodles to the skillet; stir-fry for an additional 5 minutes until combined.
  6. Scoop the mixture into lettuce leaves, topping with cilantro, green onions, peanuts, and reserved sauce.
