Ingredients
- 2 cups cooked jasmine rice
- 1 cup diced chicken breast
- 1 cup diced pineapple
- 1/2 cup diced carrots
- 1/2 cup peas
- 1/2 cup diced bell peppers
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Instructions
- Heat vegetable oil in a large skillet over medium heat. Add diced chicken breast and cook until no longer pink, about 5–7 minutes. Remove and set aside.
- In the same skillet, sauté minced garlic until fragrant, then add diced carrots, peas, and bell peppers; cook for 3–4 minutes until tender.
- Push veggies to one side of the skillet, add cooked jasmine rice to the other side, and mix gently. Incorporate diced pineapple and stir-fry until well combined.
- In a small bowl, mix soy sauce with salt and pepper; pour over the rice mixture and stir well.
- Return cooked chicken to the skillet and mix until heated through for about 2–3 minutes.
