  • 2 cups cooked jasmine rice
  • 1 cup diced chicken breast
  • 1 cup diced pineapple
  • 1/2 cup diced carrots
  • 1/2 cup peas
  • 1/2 cup diced bell peppers
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Add diced chicken breast and cook until no longer pink, about 5–7 minutes. Remove and set aside.
  2. In the same skillet, sauté minced garlic until fragrant, then add diced carrots, peas, and bell peppers; cook for 3–4 minutes until tender.
  3. Push veggies to one side of the skillet, add cooked jasmine rice to the other side, and mix gently. Incorporate diced pineapple and stir-fry until well combined.
  4. In a small bowl, mix soy sauce with salt and pepper; pour over the rice mixture and stir well.
  5. Return cooked chicken to the skillet and mix until heated through for about 2–3 minutes.
  6. Serve hot on plates or in bowls.
