- 1 head cabbage
- 1 pound ground beef
- 1/3 cup uncooked white rice
- 2 cans (10.75 oz) tomato soup
- 1/4 cup onion (finely chopped)
- 1 egg (beaten)
- 1 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Blanch cabbage leaves in salted boiling water for 12–14 minutes until soft. Remove eight leaves and set aside.
- Preheat oven to 350°F.
- Cook rice according to package instructions.
- In a bowl, combine ground beef, cooked rice, chopped onion, beaten egg, salt, pepper, and ¼ cup tomato soup mixture.
- Place filling in the center of each cabbage leaf, roll tightly, and secure with toothpicks.
- Arrange rolls in a baking dish layered with leftover cabbage leaves.
- Pour remaining tomato soup over rolls, cover with foil, and bake for 90 minutes.
