  • 1 head cabbage
  • 1 pound ground beef
  • 1/3 cup uncooked white rice
  • 2 cans (10.75 oz) tomato soup
  • 1/4 cup onion (finely chopped)
  • 1 egg (beaten)
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Blanch cabbage leaves in salted boiling water for 12–14 minutes until soft. Remove eight leaves and set aside.
  2. Preheat oven to 350°F.
  3. Cook rice according to package instructions.
  4. In a bowl, combine ground beef, cooked rice, chopped onion, beaten egg, salt, pepper, and ¼ cup tomato soup mixture.
  5. Place filling in the center of each cabbage leaf, roll tightly, and secure with toothpicks.
  6. Arrange rolls in a baking dish layered with leftover cabbage leaves.
  7. Pour remaining tomato soup over rolls, cover with foil, and bake for 90 minutes.
