- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ⅓ cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon ground cloves
- Pinch of salt
Instructions
- Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and ground cinnamon. Stir in melted butter until crumbly. Press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, followed by sour cream. Mix until combined.
- In another bowl, mix pumpkin puree with ground cinnamon, nutmeg, ginger, cloves, and salt. Fold half of the cream cheese mixture into the pumpkin mixture.
- Pour half of the plain filling into the crust. Alternate dollops of plain and pumpkin filling; swirl gently with a knife.
- Bake for about 1 hour or until set around edges but slightly jiggly in center. Turn off oven and leave cheesecake inside for an hour before cooling at room temperature.
- Chill in the refrigerator for at least five hours or overnight before serving.
