  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ⅓ cup unsalted butter, melted
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (160°C). In a mixing bowl, combine graham cracker crumbs, granulated sugar, and ground cinnamon. Stir in melted butter until crumbly. Press into the bottom of a springform pan.
  2. In a large bowl, beat cream cheese and granulated sugar until smooth. Add eggs one at a time, followed by sour cream. Mix until combined.
  3. In another bowl, mix pumpkin puree with ground cinnamon, nutmeg, ginger, cloves, and salt. Fold half of the cream cheese mixture into the pumpkin mixture.
  4. Pour half of the plain filling into the crust. Alternate dollops of plain and pumpkin filling; swirl gently with a knife.
  5. Bake for about 1 hour or until set around edges but slightly jiggly in center. Turn off oven and leave cheesecake inside for an hour before cooling at room temperature.
  6. Chill in the refrigerator for at least five hours or overnight before serving.
