  • ¼ cup heavy cream
  • 4 tablespoons raspberry powder (dried)
  • 8 ounces dark chocolate chips

Instructions

  1. In a microwave-safe bowl, combine white chocolate chips and heavy cream. Microwave in 15-second increments until melted and smooth.
  2. Stir in raspberry powder until well combined.
  3. Chill the mixture in the fridge for 10-15 minutes until firm enough to roll into balls.
  4. Use a cookie scoop to portion out the filling, then roll into uniform balls using clean hands.
  5. Place truffles on a parchment-lined baking sheet.
  6. Melt dark chocolate chips in a medium bowl using the microwave (15 seconds at a time).
  7. Dip each truffle into the melted dark chocolate until fully coated, allowing excess chocolate to drip off.
  8. Return coated truffles to parchment paper and refrigerate for 10 minutes to set.
  9. Drizzle remaining melted dark chocolate over each truffle and sprinkle with extra raspberry powder while still wet.
