  • 18 ounces sweetened red bean paste
  • 3 cups bread flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon instant yeast
  • 1 cup warm whole milk
  • 1/3 cup warm heavy cream
  • 1 egg
  • 1 egg yolk
  • Sesame seeds for topping

Instructions

  1. In a stand mixer, combine bread flour, sugar, salt, instant yeast, and milk powder. Add warm whole milk, heavy cream, and egg; knead on low speed for about 10 minutes.
  2. Cover and let the dough rise for about 2 hours until doubled in size.
  3. Divide the dough into 9 pieces; shape each into a ball. Flatten slightly, place red bean paste in the center, seal tightly, and shape into a bun.
  4. For flower shapes, flatten slightly and make slits on top without cutting through.
  5. Let buns rise again for about 30 minutes while preheating the oven to 350°F.
  6. Brush with egg wash and sprinkle sesame seeds; bake for about 20 minutes until golden.
