  • 960 ml chicken broth
  • 240 ml heavy cream
  • 28 g unsalted butter
  • 60 g shredded cheddar cheese
  • Salt, to taste
  • Black pepper, to taste
  • 225 g large shrimp, peeled and deveined
  • 15 ml olive oil
  • 14 g unsalted butter
  • 1 tablespoon Cajun seasoning
  • 2 garlic cloves, minced
  • 2 red snapper fillets (about 170 g each)
  • 240 ml heavy cream
  • 120 ml chicken broth
  • 28 g unsalted butter
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 2 garlic cloves, minced
  • 50 g grated Parmesan cheese
  • 1 teaspoon hot sauce (optional)

Instructions

  1. In a medium saucepan, bring chicken broth to a boil. Gradually whisk in grits. Reduce heat to low and cook uncovered for 20-25 minutes, stirring frequently. Add heavy cream, butter, cheddar cheese, salt, and pepper. Keep warm.
  2. In a large skillet, heat olive oil and butter over medium-high heat. Sauté garlic for 30 seconds, then add shrimp seasoned with Cajun seasoning. Cook for 2-3 minutes per side until pink. Remove and set aside.
  3. Pat dry red snapper fillets and season both sides with Cajun seasoning. In the same skillet, cook snapper for 3-4 minutes per side until golden brown. Remove from skillet.
  4. For the cream sauce, melt butter in the skillet, add garlic, Cajun seasoning, and chicken broth; simmer for 2 minutes. Stir in heavy cream and Parmesan cheese until smooth.
  5. Serve creamy grits topped with red snapper and shrimp, drizzled with Cajun cream sauce.
