  • 1/2 cup freshly squeezed lemon juice
  • 1/4 cup granulated sugar
  • 2 tsp agar-agar powder
  • 1/2 cup water
  • 8 oz Ritz crackers (approximately one sleeve)
  • 1 cup mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Prepare the mixed berries by washing and slicing larger pieces into bite-sized portions. Set aside.
  2. In a large bowl, combine whipped topping with lemon juice and sugar; mix until smooth.
  3. In a small saucepan over low heat, dissolve agar-agar in water; let cool slightly before adding to the whipped topping mixture.
  4. In an 8×8-inch dish, layer Ritz crackers at the bottom followed by half of the lemon cream and half of the mixed berries.
  5. Repeat layers with remaining Ritz crackers, lemon cream, and berries; finish with one last layer of crackers.
  6. Cover and refrigerate for at least 4 hours or overnight.
