  • 2 cloves garlic (minced)

  • 1 teaspoon dried rosemary
  • 1 teaspoon dried basil
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Place sweet potato wedges on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes until tender.
  2. In a large pot, heat olive oil over medium heat. Sauté diced onion for about 5 minutes until softened. Add minced garlic, thyme, rosemary, and basil; cook for another 1-2 minutes.
  3. Add roasted sweet potatoes and vegetable broth to the pot. Stir well and bring to a boil before reducing heat to simmer for 10-15 minutes.
  4. Blend the soup until smooth using an immersion blender. Stir in coconut milk; heat through for an additional 5 minutes. Season with salt and pepper.
  5. Serve warm, garnished with reserved roasted sweet potato wedges and fresh thyme.
