  • 1 lb lean ground beef
  • 2 green onions, finely chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup breadcrumbs (plain or panko)
  • 1 large egg
  • 1/2 cup Korean BBQ sauce (store-bought or homemade)
  • 1/2 cup mayonnaise
  • 2 tbsp Sriracha sauce (adjust for spice level)
  • 1 tbsp lime juice (freshly squeezed)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, green onions, garlic, ginger, breadcrumbs, egg, and half of the Korean BBQ sauce. Mix until well combined.
  3. Shape the mixture into golf ball-sized meatballs and arrange them on the prepared baking sheet.
  4. Bake for 20-25 minutes until golden brown. Brush with remaining BBQ sauce halfway through.
  5. While baking, whisk together mayonnaise, Sriracha, and lime juice in a small bowl until smooth.
  6. Serve meatballs hot with the Spicy Mayo Dip.
