  • 1 lb. baby red potatoes
  • 2 bell peppers (red, yellow, or orange)
  • 2 small or 1 large zucchini
  • 1 large red onion
  • Extra virgin olive oil
  • Reduced sodium soy sauce
  • Balsamic vinegar
  • Lemon juice
  • Brown sugar
  • Worcestershire sauce
  • Dijon mustard

Instructions

  1. Prepare the marinade by whisking together all ingredients in a large bowl. Reserve some for basting.
  2. Marinate the top sirloin steak in the marinade for at least 2 hours in the refrigerator.
