Description

  • 1 tbsp olive oil
  • 1 red bell pepper, finely chopped
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 lbs ground beef
  • ¾ cup Italian-style breadcrumbs
  • ½ cup grated parmesan cheese
  • 2 eggs
  • 2 tbsp tomato paste
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • About ¼ lb deli chicken
  • 1215 large fresh basil leaves
  • 1 ¼ cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 350°F.
  2. In a skillet, heat olive oil over medium heat; sauté onions and red peppers until soft. Add garlic and cook until fragrant. Remove from heat.
  3. In a large bowl, mix ground beef, breadcrumbs, parmesan, eggs, tomato paste, salt, pepper, parsley, and the sautéed vegetables until combined.
  4. On parchment paper, shape the meat mixture into an 8"x15" rectangle. Layer with chicken slices, basil leaves, and mozzarella cheese.
  5. Roll up tightly using the parchment as a guide; seal edges well.
  6. Place on a baking sheet lined with parchment paper and bake for about 1 hour.
  7. Let rest for 10 minutes before slicing.
