Ingredients
- 2 lb chicken thighs
- 2 cups jasmine rice
- 15 oz chickpeas
- 8 oz tomatoes
- 5 oz spinach
- 6 garlic cloves
- 4 tbsp lemon juice

- 1.5 tsp oregano
- 1.5 tsp paprika
- 1/2 tsp salt
- 1/4 tsp red pepper flakes
- 2 tbsp olive oil
- 1 tbsp olive oil
- 1/2 tsp salt
- 2 cups water or broth
Instructions
- In a mixing bowl, combine oregano, paprika, salt, red pepper flakes, and olive oil. Add chicken thighs and coat well. Let marinate for 10 minutes.
- Heat a large skillet over medium heat; cook marinated chicken for 6–7 minutes on each side until golden brown and cooked through. Remove from skillet.
- In the same skillet, sauté minced garlic until fragrant. Add halved tomatoes, spinach, oregano, and salt; cook until spinach wilts.
- Stir in rinsed jasmine rice and add water or broth as per package instructions; bring to a boil then reduce heat to low. Cover and simmer for about 15 minutes until rice is tender.
- Fold in chickpeas and lemon juice; return chicken to the skillet and mix gently. Top with crumbled feta cheese before serving.
