  • 2 lb chicken thighs
  • 2 cups jasmine rice
  • 15 oz chickpeas
  • 8 oz tomatoes
  • 5 oz spinach
  • 6 garlic cloves
  • 4 tbsp lemon juice
  • crumbled feta cheese
  • 1.5 tsp oregano
  • 1.5 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes
  • 2 tbsp olive oil
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 2 cups water or broth

Instructions

  1. In a mixing bowl, combine oregano, paprika, salt, red pepper flakes, and olive oil. Add chicken thighs and coat well. Let marinate for 10 minutes.
  2. Heat a large skillet over medium heat; cook marinated chicken for 6–7 minutes on each side until golden brown and cooked through. Remove from skillet.
  3. In the same skillet, sauté minced garlic until fragrant. Add halved tomatoes, spinach, oregano, and salt; cook until spinach wilts.
  4. Stir in rinsed jasmine rice and add water or broth as per package instructions; bring to a boil then reduce heat to low. Cover and simmer for about 15 minutes until rice is tender.
  5. Fold in chickpeas and lemon juice; return chicken to the skillet and mix gently. Top with crumbled feta cheese before serving.
