Ingredients
- 450g digestive biscuits
- 1/2 cup (125ml) melted vegan butter
- 1 cup (145g) brown sugar
- 1 cup (250ml) room temperature soy cream
- 1/2 cup (120g) cubed room temperature vegan butter
- 3/4 cup (200ml) soy whipping cream
- Shredded vegan milk chocolate (optional)
Instructions
- Make the crust by processing digestive biscuits in a food processor until fine crumbs form. Mix with melted vegan butter.
- Press the mixture into a pie tin and freeze for about 30 minutes.
- Prepare the caramel by melting brown sugar in a saucepan, then adding cubed vegan butter and soy cream while stirring continuously.
- Cook until thickened and pour into the prepared crust. Refrigerate for at least 4 hours or overnight.
- Slice bananas and whip soy cream until fluffy.
