Ingredients
- 1 large sweet potato
- 1 pound ground beef
- 1/4 cup yellow onion
- 1/4 cup red onion
- 1/2 – 1 green bell pepper
- Ghee or olive oil
- Garlic
- Mustard
- Paleo ketchup
- Coconut aminos
- Apple cider vinegar
Instructions
- Preheat oven to 415°F (210°C).
- Slice the sweet potato into 1/4 inch rounds and toss with olive oil and salt on a baking sheet. Roast for 10-12 minutes until tender.
- In a cast iron skillet, heat ghee or oil over medium-high heat. Sauté minced garlic, onion, and bell pepper until soft.
- Add ground beef to the skillet and cook until browned. Drain excess grease.
- Stir in mustard, ketchup, coconut aminos, and seasonings; mix well.
