Ingredients

  • 1 large sweet potato
  • 1 pound ground beef
  • 1/4 cup yellow onion
  • 1/4 cup red onion
  • 1/21 green bell pepper
  • Ghee or olive oil
  • Garlic
  • Mustard
  • Paleo ketchup
  • Coconut aminos
  • Apple cider vinegar

Instructions

  1. Preheat oven to 415°F (210°C).
  2. Slice the sweet potato into 1/4 inch rounds and toss with olive oil and salt on a baking sheet. Roast for 10-12 minutes until tender.
  3. In a cast iron skillet, heat ghee or oil over medium-high heat. Sauté minced garlic, onion, and bell pepper until soft.
  4. Add ground beef to the skillet and cook until browned. Drain excess grease.
  5. Stir in mustard, ketchup, coconut aminos, and seasonings; mix well.
  6. Assemble bowls by layering roasted sweet potatoes with the beef mixture. Top with desired garnishes.
