  • 2 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Preheat your oven to 325°F (165°C).
  2. In a Dutch oven over medium-high heat, heat olive oil. Add beef cubes in batches and sear until browned on all sides (about 5-7 minutes). Remove and set aside.
  3. In the same pot, sauté onions, garlic, carrots, and celery until softened (about 5 minutes).
  4. Return seared beef to the pot. Add diced tomatoes, beef broth, tomato paste, and herbs. Stir well.
  5. Cover and bake in the preheated oven for 2-3 hours until the beef is tender.
  6. Let cool slightly before serving.
