Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 1 cup beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
Instructions
- Preheat your oven to 325°F (165°C).
- In a Dutch oven over medium-high heat, heat olive oil. Add beef cubes in batches and sear until browned on all sides (about 5-7 minutes). Remove and set aside.
- In the same pot, sauté onions, garlic, carrots, and celery until softened (about 5 minutes).
