  • 80g granulated sugar
  • 1/2 tsp ground cinnamon
  • 1/4 tsp kosher salt
  • 1 tbsp cornstarch
  • 125g pecan halves
  • 190g unsalted butter, at room temperature
  • 280g brown sugar
  • 2 tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 115g unsalted butter, at room temperature
  • 225g cream cheese, at room temperature
  • 250g powdered sugar, sifted
  • 12 tbsp heavy whipping cream
  • 1/2 tsp kosher salt

Instructions

  1. Prepare the dough by combining lukewarm milk, sugar, and yeast; let sit until foamy. Mix in eggs, salt, flour, and butter.
  2. Knead the dough until smooth and elastic, then let it rise until doubled in size (about 1 hour).
  3. Cook diced apples with butter, sugar, cinnamon, and salt until softened; stir in cornstarch to thicken.
  4. Mix together the cinnamon filling ingredients until smooth.
  5. Roll out the dough, spread the fillings evenly, roll tightly into a log, and cut into pieces.
  6. Allow to rise again before baking at 350°F (175°C) for about 25–30 minutes until golden brown.
  7. For frosting, combine cream cheese and butter; add powdered sugar gradually while mixing for desired consistency.
