- 80g granulated sugar
- 1/2 tsp ground cinnamon
- 1/4 tsp kosher salt
- 1 tbsp cornstarch
- 125g pecan halves
- 190g unsalted butter, at room temperature
- 280g brown sugar
- 2 tbsp plus 1 tsp ground cinnamon
- 1/8 tsp kosher salt
- 115g unsalted butter, at room temperature
- 225g cream cheese, at room temperature
- 250g powdered sugar, sifted
- 1–2 tbsp heavy whipping cream
- 1/2 tsp kosher salt
Instructions
- Prepare the dough by combining lukewarm milk, sugar, and yeast; let sit until foamy. Mix in eggs, salt, flour, and butter.
- Knead the dough until smooth and elastic, then let it rise until doubled in size (about 1 hour).
- Cook diced apples with butter, sugar, cinnamon, and salt until softened; stir in cornstarch to thicken.
- Mix together the cinnamon filling ingredients until smooth.
