- 4 cups shredded green cabbage
- 1 cup shredded purple cabbage (optional)
- 1½ cups corn kernels
- 1 large carrot, shredded
- 1–2 jalapeños, finely diced
- ¼ cup chopped fresh cilantro
- ½ cup mayonnaise
- 2 tablespoons plain Greek yogurt or sour cream
- 1 tablespoon apple cider vinegar
- 1 tablespoon fresh lime juice
- 1 teaspoon honey or sugar
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
- 2 tablespoons fresh parsley, finely chopped
Instructions
- In a small bowl, whisk together mayonnaise, Greek yogurt (or sour cream), apple cider vinegar, lime juice, honey (or sugar), garlic powder, salt, and pepper.
- In a large mixing bowl, combine shredded green cabbage and optional purple cabbage with corn kernels and shredded carrot.
- Add diced jalapeños and sliced green onions to the mixture.
- Pour the dressing over the slaw and gently toss until everything is evenly coated.
- Cover and chill in the refrigerator for at least 20–30 minutes before serving.
