Description

  • 4 cups shredded green cabbage
  • 1 cup shredded purple cabbage (optional)
  • 1½ cups corn kernels
  • 1 large carrot, shredded
  • 12 jalapeños, finely diced
  • ¼ cup chopped fresh cilantro
  • ½ cup mayonnaise
  • 2 tablespoons plain Greek yogurt or sour cream
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey or sugar
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a small bowl, whisk together mayonnaise, Greek yogurt (or sour cream), apple cider vinegar, lime juice, honey (or sugar), garlic powder, salt, and pepper.
  2. In a large mixing bowl, combine shredded green cabbage and optional purple cabbage with corn kernels and shredded carrot.
  3. Add diced jalapeños and sliced green onions to the mixture.
  4. Pour the dressing over the slaw and gently toss until everything is evenly coated.
  5. Cover and chill in the refrigerator for at least 20–30 minutes before serving.
