Ingredients

  • 4 cups chopped carrots
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 4 cups low-sodium vegetable broth
  • 1 can full-fat coconut milk
  • 3 tablespoons miso paste
  • 2 tablespoons soy sauce (or tamari)
  • 1 tablespoon Sriracha (adjust to taste)
  • Salt and pepper to taste
  • Chopped green onions and cilantro for garnish

Instructions

  1. In a large pot over medium heat, add olive oil and sauté the diced onion for about 5 minutes until translucent. Stir in garlic and ginger until fragrant.
  2. Add chopped carrots and vegetable broth; bring to a boil. Reduce heat and simmer for about 15 minutes or until carrots are tender.
  3. Remove pot from heat and blend until smooth using an immersion blender or standard blender.
  4. Return blended soup to low heat; stir in miso paste, soy sauce, Sriracha, coconut milk, salt, and pepper until well combined.
  5. Serve hot, garnished with green onions and cilantro.
