Ingredients
- 4 cups chopped carrots
- 1 medium onion, diced

- 2 tablespoons soy sauce (or tamari)

Instructions
- In a large pot over medium heat, add olive oil and sauté the diced onion for about 5 minutes until translucent. Stir in garlic and ginger until fragrant.
