  • 2 medium zucchinis
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • 1 cup chopped spinach
  • 1 cup sautéed mushrooms
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and slice the zucchinis in half lengthwise. Scoop out the flesh to create a hollow cavity.
  3. In a mixing bowl, combine ricotta cheese, shredded mozzarella, chopped spinach, sautéed mushrooms, salt, and pepper until well blended.
  4. Spoon the filling mixture into each zucchini half and top with additional mozzarella.
