  • 1/2 cup pineapple juice
  • 1/3 cup low sodium soy sauce
  • 1/3 cup low sodium chicken stock
  • 1/3 cup hoisin sauce
  • 1/2 cup brown sugar
  • 1 tablespoon minced fresh garlic
  • 2 teaspoons cornstarch
  • 1 tablespoon olive oil
  • 8 boneless, skinless chicken thighs cut into 1-inch cubes
  • 1 cup diced pineapple
  • Rice

Instructions

  1. In a medium saucepan, whisk together pineapple juice, soy sauce, chicken stock, hoisin sauce, brown sugar, minced garlic, and cornstarch. Bring to a boil and reduce until thickened (about 5 minutes). Set aside.
  2. Heat olive oil in a nonstick skillet over medium-high heat. Add chicken cubes and season with salt and pepper. Cook until no longer pink (about 5 minutes).
  3. Drain excess liquid and stir in the prepared sauce. Mix well.
  4. Add diced pineapple and cook for an additional minute until heated through.
  5. Serve over rice or in a hollowed-out pineapple.
