  • 1 ½ lbs lean ground beef
  • 1 box stove top stuffing mix (any flavor)
  • 1 cup diced onion
  • 2 eggs
  • ⅓ cup milk
  • ¾ cup ketchup
  • 1 Tbsp white vinegar

Instructions

  1. Preheat your oven to 350°F and prepare a baking sheet with aluminum foil.
  2. In a large mixing bowl, combine lean ground beef, stuffing mix, diced onion, eggs, and milk until well mixed.
  3. Spray a loaf pan with non-stick spray and pack the mixture tightly into it. Flip onto the baking sheet for even cooking.
  4. Bake uncovered for about 40 minutes.
  5. While baking, mix ketchup and white vinegar to create the topping sauce.
  6. After 40 minutes, spread the sauce over the meatloaf and return it to the oven for an additional 10-30 minutes until reaching an internal temperature of 160°F.
  7. Let rest for 10 minutes before slicing.
