  • 1 1/4 cups (250g) granulated sugar
  • 3 large egg whites, at room temperature
  • 1 large whole egg, at room temperature
  • 2/3 cup (160ml) whole milk, at room temperature
  • 3-ounce package (85g) strawberry flavored vegan gelatin powder
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups (270g) all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
  • 1 cup (226g) unsalted butter, softened (for frosting)
  • 1/4 cup (60ml) heavy cream (or whole milk)
  • 2 teaspoons pure vanilla extract (for frosting)
  • 1/8 teaspoon fine sea salt (for frosting)
  • 4 cups (480g) confectioners' sugar, sifted (for frosting)
  • 12 Golden sandwich cookies, cream filling removed (or 1 ½ cups crushed shortbread cookies)
  • 1 cup (about 25g) freeze-dried strawberries, lightly crushed
  • 4 tablespoons (56g) unsalted butter, melted and cooled

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare your cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the egg whites one at a time, mixing well after each addition.
  4. Mix in the whole egg until fully incorporated.
  5. Gradually add the milk while continuing to mix.
  6. Stir in the strawberry vegan gelatin powder and vanilla extract.
  7. In another bowl, combine the sifted flour, baking powder, baking soda, and salt.
  8. Gradually add this dry mixture into the wet ingredients until just combined.
  9. Divide the batter evenly between prepared cake pans and bake for about 25 minutes or until a toothpick inserted into the center comes out clean.
  10. Allow to cool in pans for 10 minutes before transferring to a cooling rack.
  11. For the frosting, in a clean bowl, beat together softened butter and heavy cream until smooth.
  12. Gradually add the confectioners' sugar while mixing until light and fluffy.
  13. Stir in vanilla extract and salt.

  15. Spread an even layer of frosting on top and add the second layer of cake.
  16. Frost the top and sides of the entire cake.
  17. In a separate bowl, combine crushed cookies with freeze-dried strawberries and melted butter until well mixed.
