  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 2 large eggs
  • ½ cup strawberry puree or jam
  • 1 ½ cups crushed graham crackers or golden Oreos
  • ¼ cup unsalted butter (for crust)
  • 1 cup crushed golden Oreos or vanilla wafers (for topping)
  • ½ cup freeze-dried strawberries

Instructions

  1. Preheat oven to 325°F (163°C) and line a mini muffin tin or an 8×8-inch pan with parchment paper.
  2. In a mixing bowl, combine crushed graham crackers with melted butter; press into the bottom of the prepared pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in sour cream, vanilla extract, and strawberry puree until well combined.
  4. Pour cheesecake mixture over the crust and bake for 20–25 minutes (mini muffin tin) or 35–40 minutes (8×8-inch pan), until slightly jiggly in the center.
  5. Allow to cool to room temperature before refrigerating for at least four hours.
  6. For topping, mix crushed Oreos and freeze-dried strawberries with melted butter; sprinkle over each cheesecake bite before serving.
