  • 2 cups sliced strawberries
  • 1/2 red onion (thinly sliced)
  • 1/4 cup dried cranberries
  • 1/2 cup feta cheese crumbles
  • 1/2 cup glazed pecans (recipe below)
  • 4 slices Turkey Bacon (cooked and crumbled)
  • 2 grilled chicken breasts (sliced)
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey
  • 2 tablespoons white sugar
  • 1 teaspoon Dijon mustard
  • salt and pepper to taste
  • 3/4 cup olive oil or vegetable oil
  • 1 1/2 cups pecan halves
  • 1/4 cup white sugar
  • 2 tablespoons water
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare the dressing by whisking apple cider vinegar, honey, white sugar, Dijon mustard, salt, pepper, and olive oil in a mixing bowl until well combined.
  2. Make the glazed pecans by boiling water with sugar, salt, black pepper, and cayenne in a saucepan. Coat pecan halves in the mixture and bake on a greased baking sheet at 350°F for 12–14 minutes until golden brown.
  3. In a large salad bowl, toss together mixed greens, sliced strawberries, red onion, dried cranberries, feta cheese, crumbled turkey bacon, sliced grilled chicken, and glazed pecans.
  4. Drizzle the dressing over the salad just before serving and toss gently to combine.
