Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the coconut oil, brown sugar, and granulated sugar. Beat in the egg (or flax egg), vanilla extract, and molasses until smooth.
- In another bowl, whisk together the flour, oats, baking soda, optional cinnamon, and salt. Gradually combine dry ingredients into the wet mixture until well mixed.
- Use a cookie scoop or spoon to drop dough balls onto the prepared baking sheet about two inches apart.
- Bake for approximately 12 minutes or until golden brown around the edges. Cool on the baking sheet before transferring to a wire rack.
- For icing: Crush freeze-dried strawberries into powder and mix with water or liquid of choice until desired consistency is reached.
