  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg or flax egg
  • 1 teaspoon pure vanilla extract
  • 1/4 cup molasses or agave syrup
  • 1 1/2 cups all-purpose flour or gluten-free flour blend
  • 2 cups old-fashioned oats
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon salt
  • 1/2 cup freeze-dried strawberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the coconut oil, brown sugar, and granulated sugar. Beat in the egg (or flax egg), vanilla extract, and molasses until smooth.
  3. In another bowl, whisk together the flour, oats, baking soda, optional cinnamon, and salt. Gradually combine dry ingredients into the wet mixture until well mixed.
  4. Use a cookie scoop or spoon to drop dough balls onto the prepared baking sheet about two inches apart.
  5. Bake for approximately 12 minutes or until golden brown around the edges. Cool on the baking sheet before transferring to a wire rack.
  6. For icing: Crush freeze-dried strawberries into powder and mix with water or liquid of choice until desired consistency is reached.
  7. Once cooled, generously ice each cookie and allow them to set before serving.
