- 1 tsp pure lemon juice or lime juice
Instructions
- Preheat your oven to 325°F (165°C) and grease your bundt or loaf pan.
- Blend half of the strawberries into a puree; reserve two tablespoons for the glaze.
- In a bowl, whisk together flour, salt, and baking soda.
- Cream butter and sugar in a large bowl until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Gradually mix in dry ingredients alternating with buttermilk.
- Stir in vanilla extract, reserved strawberry puree, and optional food coloring.
- Pour batter into the prepared pan and bake for about 70 minutes or until a toothpick comes out clean.
- Cool in the pan for 15 minutes before transferring to a wire rack.
- For the glaze, mix reserved strawberry puree with powdered sugar and lemon juice until smooth; drizzle over cooled cake.
