  • 3 cups granulated sugar
  • 5 large eggs (room temperature)
  • 3 cups all-purpose flour (sifted)

  • 1 cup buttermilk
  • 1 tsp vanilla extract
  • 2 tsp strawberry extract (optional)
  • 1/2 tsp red food coloring (optional)
  • 2 tbsp strawberry puree (reserved from the cake)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract (for glaze)
  • 1 tsp pure lemon juice or lime juice

Instructions

  1. Preheat your oven to 325°F (165°C) and grease your bundt or loaf pan.
  2. Blend half of the strawberries into a puree; reserve two tablespoons for the glaze.
  3. In a bowl, whisk together flour, salt, and baking soda.
  4. Cream butter and sugar in a large bowl until light and fluffy.
  5. Add eggs one at a time, beating well after each addition.
  6. Gradually mix in dry ingredients alternating with buttermilk.
  7. Stir in vanilla extract, reserved strawberry puree, and optional food coloring.
  8. Pour batter into the prepared pan and bake for about 70 minutes or until a toothpick comes out clean.
  9. Cool in the pan for 15 minutes before transferring to a wire rack.
  10. For the glaze, mix reserved strawberry puree with powdered sugar and lemon juice until smooth; drizzle over cooled cake.
