  • 4 large Portobello mushrooms (stems removed)
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 cup spinach (chopped)
  • ½ cup cherry tomatoes (diced)
  • ¼ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking sheet.
  2. Brush both sides of the mushrooms with olive oil, placing them gill-side up on the baking sheet. Season with salt and pepper.
  3. In a sauté pan over medium heat, sauté minced garlic in 1 tablespoon of olive oil for about 1 minute until fragrant. Add chopped spinach and cook until wilted. Remove from heat and mix in diced cherry tomatoes, breadcrumbs, grated Parmesan cheese, Italian seasoning, salt, and pepper.
  4. Spoon the filling evenly into each mushroom cap and top generously with shredded mozzarella cheese.
  5. Bake in the preheated oven for 15–18 minutes or until the mushrooms are tender and the cheese is bubbly.
  6. Garnish with fresh basil or parsley if desired before serving warm.
