- 1 batch 15-Minute Puff Pastry
- 1 egg yolk
- 1/3 cup cream cheese
- 1 Tbsp fresh lime juice
- 4 Tbsp fine turbinado sugar
- 3 peaches (or nectarines)
- Handful of strawberries
- Handful of raspberries
- Handful of blackberries
- Handful of blueberries
- Mint leaves for garnish
Instructions
- Preheat your oven to 350°F (180°C).
- Roll out puff pastry into a 10"x7" rectangle on parchment paper.
- Create a border by bending over the edges and pressing down.
- Whisk the egg yolk with 1 Tbsp water; brush onto the edges for a golden finish.
- Poke holes in the pastry and weigh down with beans before baking for about 20 minutes until golden brown.
- Cool your crust completely on a wire rack.
- Whisk together cream cheese, lime juice, and turbinado sugar until smooth.
- Spread the cream cheese mixture over the cooled crust.
- Layer sliced peaches on top followed by assorted berries.
- Garnish with mint leaves before serving.
