  • 12 oz jumbo pasta shells
  • 1 ½ cups ricotta cheese
  • ½ cup sun-dried tomatoes (finely chopped)
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese (divided)
  • 1 large egg
  • 2 cloves garlic (minced)
  • 2 ½ cups marinara sauce
  • 1 teaspoon olive oil
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil salted water in a large pot, add jumbo pasta shells, and cook until al dente. Drain and set aside.
  3. In a mixing bowl, combine ricotta cheese, sun-dried tomatoes, Parmesan cheese, half of the mozzarella, egg, garlic, Italian seasoning, salt, black pepper, and red pepper flakes if desired. Mix well.
  4. Carefully fill each cooked shell with about 2 tablespoons of the ricotta mixture.
  5. In a baking dish, spread half of the marinara sauce on the bottom. Arrange filled shells in a single layer on top and cover with remaining sauce and mozzarella.
  6. Cover with foil and bake for 20 minutes. Remove foil and bake another 10 minutes until bubbly and golden brown.
