  • 1 cup granulated sugar (divided)
  • 1/2 cup unsalted butter, softened
  • 3 large fresh lemons (juiced)
  • 2 large eggs
  • 1/2 tsp baking powder
  • 2 tbsp cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flour and 1/4 cup sugar. Cut in the softened butter until it resembles coarse crumbs. Press into a greased baking dish.
  3. Bake the crust for about 15 minutes until lightly golden.
  4. In another bowl, whisk together the remaining sugar, lemon juice, eggs, baking powder, and cornstarch until smooth.
  5. Pour the lemon mixture over the baked crust and return to the oven for an additional 20-25 minutes or until set.
  6. Allow to cool completely before slicing into squares. Optionally sprinkle with powdered sugar before serving.
