Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the flour and 1/4 cup sugar. Cut in the softened butter until it resembles coarse crumbs. Press into a greased baking dish.
- Bake the crust for about 15 minutes until lightly golden.
- In another bowl, whisk together the remaining sugar, lemon juice, eggs, baking powder, and cornstarch until smooth.
- Pour the lemon mixture over the baked crust and return to the oven for an additional 20-25 minutes or until set.
- Allow to cool completely before slicing into squares. Optionally sprinkle with powdered sugar before serving.
