  • 2 medium butternut squashes
  • 4 boneless, skinless chicken breasts (about 1 lb)
  • 1/4 cup raw honey
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Halve the butternut squashes lengthwise and scoop out the seeds. Drizzle olive oil over each half and season generously with salt and pepper.
