  • 3/4 cup light coconut milk (divided)
  • 1/2 cup sweet chili sauce
  • 1 lime
  • Salt and pepper
  • 4 chicken breasts (~2 lbs)
  • 8 cups cauliflower rice (fresh or frozen)
  • 11/2 tablespoons coconut oil
  • 1/4 cup fresh cilantro (chopped)

Instructions

  1. Marinate chicken in a mixture of 1/2 cup coconut milk, sweet chili sauce, and juice from half a lime for 30 minutes to 1 hour.
  2. Preheat your grill to medium-high heat and grease the grates.
  3. Grill marinated chicken for 4-5 minutes on one side, then flip and cook for an additional 3-4 minutes until fully cooked.
  4. In a large skillet, sauté cauliflower rice in coconut oil for about 5-7 minutes. Add lime juice, remaining coconut milk, and chopped cilantro; season to taste.
