  • 6 bell peppers
  • 1 lb lean ground beef
  • 2 cups cooked brown rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (18 oz) black beans, drained & rinsed
  • 1 can (15 oz) corn, drained & rinsed
  • 1 onion, diced
  • Taco seasoning packet
  • Shredded cheddar jack cheese

Instructions

  1. Preheat your oven to 350°F.
  2. Prepare the bell peppers by washing them, cutting in half lengthwise, and removing seeds. Place them cut side up in a baking dish, drizzle with olive oil, and bake for 5 minutes.
  3. In a large skillet over medium heat, sauté diced onion with garlic powder and chili powder until soft. Add ground beef and cook until browned.
  4. Stir in diced tomatoes, black beans, corn, cooked rice, and taco seasoning. Season with salt and pepper.
  5. Stuff each pepper half generously with the beef mixture. Cover with foil and bake for an additional 10 minutes.
  6. Uncover, sprinkle cheese on top of each pepper, and bake uncovered for another 15 minutes until cheese melts.
