Ingredients
- 6 bell peppers
- 1 lb lean ground beef
- 2 cups cooked brown rice
- 1 can (14.5 oz) diced tomatoes
- 1 can (18 oz) black beans, drained & rinsed
- 1 can (15 oz) corn, drained & rinsed
- 1 onion, diced
- Taco seasoning packet
- Shredded cheddar jack cheese
Instructions
- Preheat your oven to 350°F.
- Prepare the bell peppers by washing them, cutting in half lengthwise, and removing seeds. Place them cut side up in a baking dish, drizzle with olive oil, and bake for 5 minutes.
- In a large skillet over medium heat, sauté diced onion with garlic powder and chili powder until soft. Add ground beef and cook until browned.
- Stir in diced tomatoes, black beans, corn, cooked rice, and taco seasoning. Season with salt and pepper.
- Stuff each pepper half generously with the beef mixture. Cover with foil and bake for an additional 10 minutes.
- Uncover, sprinkle cheese on top of each pepper, and bake uncovered for another 15 minutes until cheese melts.
