  • 1 1/4 cups heavy cream
  • 3/4 cup whole milk
  • 1/4 cup Thai tea mix
  • 5 egg yolks
  • 1/4 cup granulated/castor sugar
  • 1 tsp vanilla paste/extract
  • 23 tbsp granulated/castor sugar (for caramelizing)

Instructions

  1. In a saucepan, combine heavy cream and milk. Heat gently until simmering, then remove from heat and add Thai tea mix. Let steep for 15 minutes.
  2. Preheat your oven to 300°F (150°C).
  3. In a bowl, whisk together egg yolks, sugar, and vanilla until combined.
  4. Strain the infused cream mixture through a fine-mesh sieve into a saucepan and heat gently again until simmering.
  5. Gradually whisk the hot cream mixture into the egg mixture to temper it.
  6. Strain the combined mixture into a measuring cup.
  7. Divide into ramekins placed in a baking pan; fill the pan with boiling water without splashing into the ramekins.
  8. Bake for 35-40 minutes until set but slightly wobbly in the center.
  9. Cool completely at room temperature, then refrigerate for at least 2 hours before serving.
  10. When ready to serve, sprinkle sugar on top of each custard and caramelize using a kitchen torch or broiler.
