  • 8 cups chopped lettuce
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • ½ cup corn
  • 2 finely chopped spring onions
  • 1 avocado
  • 14 ounces firm tofu
  • 4 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1½ tablespoons extra virgin olive oil
  • ⅓ cup tahini
  • ⅓ cup water
  • 2 tablespoons lemon juice
  • 1 clove garlic
  • ¼ teaspoon salt

Instructions

  1. Drain and press the tofu between paper towels to remove excess moisture, then cut into cubes.
  2. In a bowl, mix cornstarch, garlic powder, paprika, salt, and pepper. Toss the tofu in this mixture until coated.
  3. Heat olive oil in a non-stick skillet over medium heat and cook the tofu until golden brown on all sides (10-12 minutes).
  4. In a large mixing bowl, combine lettuce, cucumber, tomatoes, corn, spring onions, and avocado.
  5. For the dressing, whisk together tahini, water, lemon juice, minced garlic, and salt until smooth.
  6. Add the dressing and crispy tofu to the salad mixture; toss gently to coat before serving.
