  • 23 ripe peaches
  • 1 cup pitted fresh cherries
  • 8 ounces burrata cheese
  • 1/4 cup toasted pumpkin seeds
  • Fresh herbs: basil, dill, oregano, parsley
  • 1/2 cup extra virgin olive oil
  • 1/4 cup balsamic or chicken champagne vinegar
  • 1 tablespoon honey
  • 1/2 shallot, finely chopped
  • 1 clove garlic, grated
  • 1 teaspoon lemon zest
  • 1/4 cup chopped fresh basil
  • 2 tablespoons chopped fresh oregano
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh thyme
  • red pepper flakes
  • kosher salt and black pepper

Instructions

  1. Make the Vinaigrette: Combine all vinaigrette ingredients in a glass jar. Whisk until smooth and adjust seasoning to taste.
  2. Toss the Salad: In a large mixing bowl, combine halved cherry tomatoes, peach wedges, and pitted cherries. Drizzle with about 1/3 of the vinaigrette and gently toss. Let sit at room temperature for 15 minutes.
