  • 1/2 cup dry quinoa
  • 3/4 cup water
  • 23 cups chopped/sliced tomatoes
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup chopped green onion
  • 1/4 cup fresh lime juice (from 2 limes)
  • 2 tablespoons avocado oil
  • 1 clove garlic, minced
  • Fresh parsley
  • Ground cumin
  • Salt
  • Pepper

Instructions

  1. Rinse quinoa thoroughly using a mesh strainer. In a small pot over medium heat, lightly toast the quinoa for a few minutes until fragrant.
  2. Add water to the pot, bring to a boil, then reduce heat to low and simmer covered for 12–13 minutes until fluffy.
  3. While quinoa cooks, prep tomatoes and green onions. In a bowl, combine lime juice, avocado oil, minced garlic, parsley, cumin, salt, and pepper to create the dressing.
  4. Fluff cooked quinoa with a fork and allow it to cool slightly. Combine with tomatoes, chickpeas, green onion, and extra parsley if desired. Toss with half of the dressing before serving.
