  • 1 cup sultanas
  • ½ cup chopped prunes
  • ¼ cup candied citrus peel
  • ¼ cup glace fruit mix
  • ½ cup glace mixed cherries
  • 1 apple
  • 1 carrot
  • zest and juice of 1 orange
  • 3 tbsp apple juice
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • ½ tsp ginger
  • ½ tsp allspice
  • ¼ tsp cloves
  • ¼ tsp nutmeg
  • ½ cup butter (softened)
  • 1 cup brown sugar
  • 1 egg
  • ½ cup butter (for sauce)
  • 1 cup granulated sugar
  • ½ cup heavy cream
  • extra apple juice (for serving)
  • icing sugar (for garnish)

Instructions

  1. In a large mixing bowl, combine the sultanas, chopped prunes, candied citrus peel, and fruit mix.
  2. Cut the glacé cherries in half and add them as well. Peel and grate the apple and carrot before adding them to the fruit mixture.
  3. Add the zest and juice of one orange along with 3 tablespoons of apple juice. Stir well to combine thoroughly.
  4. Cover this mixture and set aside for at least one hour; you can also refrigerate it overnight for deeper flavor.
  5. Cut a small circle of parchment paper that fits inside the bottom of your pudding basin. Spray the basin well with non-stick spray.
  6. Place the parchment circle at the bottom and spray again. Set that aside. Next, cut another larger circle of parchment paper that will cover the top of your bowl.
  7. In a small mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, ginger, allspice, cloves, and nutmeg. Whisk these dry ingredients together until well blended.
  8. In a large mixing bowl, combine softened butter with brown sugar. Beat these together until blended; expect a crumbly texture.
  9. Add in one egg and beat until smooth and creamy. Then fold in your prepared fruit mixture along with any juices using a spatula until everything is well mixed.
  10. Add your dry ingredient mixture into the wet mixture gradually while stirring until smooth.
  11. Spoon this batter into your prepared pudding basin and smooth out the top using a spatula.
  12. Place your parchment circle over the top of the pudding basin then cover it tightly with foil. Use string to secure it around the edges.
  13. Fill a large pot with several inches of water ensuring it doesn't touch the bottom of your pudding basin (use an aluminum foil ring if necessary).
  14. Place your pudding basin inside this pot; add enough water so it reaches two-thirds up its side. Set over medium heat—cover with a lid—and allow it to gently simmer for about 3 ½ to 4 hours.
  15. Insert a thermometer through the foil into the center of your pudding; it should read around 200°F when done. Once cooked, remove from heat allowing it to cool in its basin for about five minutes before attempting removal.
  16. Cut away string used on foil then carefully peel back both foil layers as well as parchment from top while gently running a spatula around edges to loosen any sticking points on your pudding's sides.
  17. While steaming is happening within your pudding setup melt half a cup of butter over medium-high heat within another small saucepan followed by whisking in granulated sugar until they’re combined—this will look somewhat gritty at first which is fine!
  18. Now pour in heavy cream continuing whisking until boiling occurs regularly throughout sauce surface area!
  19. After boiling has begun remove from heat adding remaining apple juice before setting aside up until serving time arrives!
  20. Dust finished plum pudding lightly using icing sugar if preferred then plate alongside warm apple juice butter sauce ready for everyone’s delight!
