  • 6 oz strawberries
  • 6 oz blueberries
  • 1 ½ cups graham cracker crumbs
  • 4 (8 oz) packs cream cheese
  • ½ cup sour cream
  • 2 eggs
  • ¾ cup heavy cream
  • ¾ cup white granulated sugar

Instructions

  1. Prepare the berry puree by cooking berries with sugar and lemon juice until reduced. Blend until smooth.
  2. Mix graham cracker crumbs, melted butter, vanilla, and brown sugar to form the crust. Spread berry puree over the crust.
  3. Beat cream cheese until fluffy; mix in sugar and corn starch followed by eggs one at a time. Add sour cream and heavy cream.
  4. Pour cheesecake batter over the crust. Bake in a water bath at 325°F for about 85-90 minutes.
  5. Cool gradually before refrigerating for at least six hours or overnight.
