Ingredients
- 190 g all-purpose flour
- 90 g powdered sugar
- 180 g butter (room temperature)
- 800 g cream cheese (full fat, room temperature)
- 260 g granulated sugar
- 200 g sour cream (room temperature)
- 4 large eggs (room temperature)
- 300 g Twix (chopped)
- 200 g heavy cream
- 50 g corn syrup
Instructions
- Preheat your oven to 180ºC (350ºF) and prepare a springform pan with parchment paper.
- Combine flour, powdered sugar, and salt in a bowl. Mix in butter until crumbly. Press into the bottom of the pan and bake for about 18 minutes.
- Lower the oven to 160ºC (325ºF). Beat cream cheese until smooth, then gradually add sugar and mix well. Incorporate sour cream, cornstarch, and vanilla.
- Add eggs two at a time until fully combined. Gently fold in chopped Twix pieces.
- Pour batter into the crust and bake in a water bath for about an hour and twenty minutes until slightly wobbly.
- Let cool gradually before refrigerating for at least six hours or overnight.
- Prepare caramel sauce by melting sugar and corn syrup; stir in heated cream and finish with cold butter. Cool it down.
- Once chilled, drizzle caramel over the cheesecake and garnish with Twix.
