  • 8 large eggs
  • 6 medium flour tortillas
  • 2 cups shredded sharp cheddar cheese
  • 1 cup diced bell peppers (red, yellow, or green)
  • 1 cup chopped onions (sweet or yellow)
  • 2 cups cooked chicken, shredded
  • Salt and pepper to taste
  • 1 tsp chili powder

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a 9×13 inch baking dish with nonstick spray.
  2. In a large bowl, whisk together eggs, salt, pepper, and chili powder until light and fluffy.
  3. Sauté onions and bell peppers in a skillet over medium heat until tender, about 5 minutes.
  4. Layer one tortilla in the baking dish, followed by half of the sautéed veggies, half the chicken, and a third of the cheese. Pour some egg mixture over it.
  5. Repeat layers twice more, finishing with remaining egg mixture and cheese on top.
  6. Bake for 30-35 minutes until golden brown. Let cool slightly before slicing into squares.
