  • 1 tablespoon cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup cold butter, cut into cubes
  • 1 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, cold
  • 2 teaspoons pure vanilla extract
  • 4 ounces semi-sweet baking chocolate, chopped
  • 1 1/8 cups semi-sweet chocolate chips, divided
  • 3/4 cup coarsely chopped walnuts
  • Sea salt, optional

Instructions

  1. Preheat your oven to 400°F (200°C) and line two cookie sheets with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Set aside.
  3. In a stand mixer bowl, cream the cold butter with the light brown sugar and granulated sugar until smooth. Add the cold egg and vanilla extract; mix until well combined.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just incorporated. Fold in the chopped chocolate, chocolate chips, and walnuts.
  5. Using a large cookie scoop, portion out dough into balls without smoothing them out. Press additional chocolate chips onto each ball’s top.
  6. Bake for 12–13 minutes until golden around the edges but soft in the center. Let cool on the sheet for about 5 minutes before transferring to a wire rack.
